Sesame Crusted Chicken With Pineapple Salsa
Chicken:- 1/2 cup sesame seeds
- 2 tablespoons peeled minced ginger
- 2 tablespoons vegetable oil
- 1/2 teaspoon salt
- 4 (4oz) skinless boned chicken breast halves cooking spray
- Preheat oven to 350.
- Spread sesame seeds in shallow baking pan; bake at 350 for 5 minutes or until toasted, stirring after 2 1/2 minutes. Let cool. Increase oven to 400.
- Combine sesame seeds, ginger, oil, and salt in a small bowl; stir well. Spread mixture evenly over chicken, and place on a broiler pan coated with cooking spray.
- Bake at 400 for 20 minutes or until tender. Serve with salsa.
Salsa:- 1 (15 1/4 oz) can pineapple tidbits, drained
- 1/2 cup chopped red pepper
- 1/4 cup chopped cilantro
- 1 tablespoon lime juice
- 1 teaspoon peeled grated fresh ginger
- 1/4 teaspoon hot sauce
- Dash of ground cloves
