Sesame Crusted Chicken With Pineapple Salsa

Chicken:

  • 1/2 cup sesame seeds
  • 2 tablespoons peeled minced ginger
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 4 (4oz) skinless boned chicken breast halves cooking spray
  1. Preheat oven to 350.
  2. Spread sesame seeds in shallow baking pan; bake at 350 for 5 minutes or until toasted, stirring after 2 1/2 minutes. Let cool. Increase oven to 400.
  3. Combine sesame seeds, ginger, oil, and salt in a small bowl; stir well. Spread mixture evenly over chicken, and place on a broiler pan coated with cooking spray.
  4. Bake at 400 for 20 minutes or until tender. Serve with salsa.

Salsa:

  • 1 (15 1/4 oz) can pineapple tidbits, drained
  • 1/2 cup chopped red pepper
  • 1/4 cup chopped cilantro
  • 1 tablespoon lime juice
  • 1 teaspoon peeled grated fresh ginger
  • 1/4 teaspoon hot sauce
  • Dash of ground cloves

Combine all ingredients in a medium bowl; stir well. Cover and chill 15 minutes. Serve with chicken.
