Potato Leek Soup
Ingredients:- 8 Yukon Gold potatoes, diced
- 4 leeks, sliced
- 2 shallots minced
- 8-10 cups vegetable or chicken broth
- 2 bay leaves
- 1 tsp dried thyme
- Salt and white pepper to taste
- 2 cups soy milk or milk
Sauté potatoes, leeks, and shallots until crisp tender. Add enough stock to cover mixture and season with bay leaves, thyme, salt and pepper. Bring to a boil. Cover and simmer on low until potatoes are tender. Add milk (and additional salt and pepper if needed) and heat through. Use an electric wand or potato masher to achieve desired consistency.
