German Sweet Chocolate Cake
Ingredients:- 1 Pkg. (4oz) Bakers German Sweet Baking Chocolate
- ½ C water
- 2 C plus 4 TBS Swan Down Cake Flour (Swan Down is preferable but All Purpose can be used. If All-Purpose Flour is used, you only need 2 C)
NOTE: IF SWAN DOWN FLOUR IS USED, YOU MUST SIFT IT THEN MEASURE IT) - 1 tsp. Baking Soda
- ¼ tsp. Salt
- 1 C (2 sticks) butter softened
- 2 C Sugar
- 4 egg yolks
- 1 tsp. Vanilla
- 1 C buttermilk
- 4 egg whites
HEAT oven to 350F. Line Bottom of 9-inch pan (e) with wax paper. Dust with flour MELT chocolate in ½ C water stirring until completely melted MIX flour, baking soda, & salt: set aside BEAT butter & sugar until light and fluffy ADD egg yolks one at a time beating well after each addition. STIR in chocolate mixture and Vanilla ADD small amount of flour mixture and alternate with small amount of buttermilk beating until smooth after each addition BEAT egg whites on high speed until stiffened and peaks form STIR in egg whites gently Pour into prepared pans and bake for 30 minutes or until toothpick comes out clean when inserted into center of cake. Run Spatula between cake and sides of pan. Cool for 15 minutes; remove from pans and carefully remove wax paper. Place on wire racks to cool completely. Spread Coconut Pecan Frosting between layers and on top of the cake. NOTE: THE KEY TO A PERFECT CAKE IS TO USE SWAN DOWN CAKE FLOUR, SIFT THE FLOUR, AND BEAT WELL. THIS CAKE WILL HAVE A FLAT SLIGHTLY SUGARY CRUST THAT WILL TEND TO CRACK. COOL COMPLETELY TO AVOID CRACKING. Coconut Pecan FillingIngredients:- 1 Can evaporated milk
- 11/2 C sugar
- ¾ C (11/2 sticks) butter
- 4 egg yolks slightly beaten
- 11/2 tsp. vanilla
- 1 Pkg. (7oz) BAKERS ANGEL FLAKE Coconut ( about 2 & 1/3 C)
- 1 1/2 C chopped Pecans
STIR milk, sugar, butter, egg yolks, and vanilla in large saucepan over medium heat for approx 12 minutes or until thickened and golden brown in color. STIR in coconut and pecans. Cool to room temperature and spreading consistency To make a suggestion, fill out our feedback form. |
